Farm Fresh Cauliflower: The Best Cauliflower Pizza Crust

Oh Hello, Giant Cauliflower! 

I don't often get weekends off at the moment, and I'm quite alright with that! So when a day presents itself with absolutely NOTHING on the agenda (except maybe a little sleep in) I try to venture out and do things that I normally miss while I'm working. I decided to explore the local vibes of my hometown Barrie, Ontario. 

This Saturday my father and I paid a visit to the Barrie Farmers' Market. A regular spot for Oh Beehive where I am often on the other side of the sales table. We packed up our reusable glass containers and cotton totes and went for it! My dad even carried a basket with handles, and commented on how he felt one with Little Red Riding Hood...it looked good on him.

Through our small market explorations we grabbed our favourite things like the always famous homemade Indian Butter Chicken (I could literally eat this meal 5 times a week and be quite alright with it!), had breakfast provided by Without Reservations, and wandered on to find the most giant-est Cauliflower from a local farmer. This thing was the size of a full term baby about to pop! 

 

And if you don't believe me...below are some trimmings of what you'd get off a regular ol' grocery store cauliflower. Note the remaining 3/4 of Farmers' Market cauliflower!

I've been dying to try a cauliflower pizza crust recipe and have heard of a few good ones. Someone mentioned to me a while back that a friend of their makes THE BEST cauliflower pizza crusts and it was literally parmesan and cauliflower...SO I took to YouTube to sus it out and came across this wacky dude, cookin' in his pj's and serving up the freshest dad jokes known to the kitchen.

Our success with this recipe yielded a deliciously cheesy crust that looked like any other pizza crust.

Ingredients

2 c. Raw Cauliflower
1 c. Shredded Parmesan Cheese
1 Egg

Directions

1. Grate or blitz the raw Cauliflower (stems removed and set aside later for soup) until you can yield 2 cups of cauliflower rice


2. Add Cauliflower to a hot pan and just slightly heat until most of the moisture has been removed (no need to add any oils, it will dry out on it's own).
3. Cook until ALMOST browned
4. In a bowl, beat one Egg and then add Parmesan Cheese
5. Once Cauliflower has cooled, add it to the egg and cheese mixture and stir
6. Plop the mixture onto a baking sheet or pizza stone lined with parchment paper, shape how you'd like and bake at 400 F for 17-20 minutes until golden brown around the edges (as it will continue to brown during Step 7)
7. Remove from oven, top with sauce and ALL the toppings and put back into the oven until heated to desired temperature!
